What’s For Dinner?

DSC_0064-8_edited-1We ate in restaurants too much over the summer. We need to reform our sinning ways and reign in the runaway budget. So, it’s time to return to return to my zombie apocalypse cooking methods. Those damn boys eat too much food.

On Monday, a friend who was here on a business trip came over. For the five of us, I prepared a pot of risotto, a pound of shrimp, beats and goat cheese, salad (lettuce, tomatoes, kohlrabi, radishes), peas, leftover rice for Ian, one store bought rotisserie chicken, sliced melon, and cookies. It all went.

Last night, the family plowed through a whole platter of baked ziti — one pound of pasta, 3 cheeses, spinach. I haven’t made a casserole type dish in ages, because it’s all just carbs and garbage, but I needed a quick meal between swimming practice and back to school night.

I’ve got some turnips and potatoes from the CSA share, so I think I’ll make a stew tonight.

  1. Yum. I love carb laden comfort meals like risotto and baked casseroles (though my preference is more likely to be Indian based rice or Mexican rice/enchaladas/etc.). I wish there was a teenage boy with an infinite stomach to indulge around here, so that I could excuse eating it more often.

  2. This week I did: Giant pot of Beef Stew, Giant Pot of baked potato soup, potato skins, seared salmon and snap peas, sausage and peppers, Chicken Paprikash, basmati rice and zucchini. Salads with homemade vinaigrette every meal. Trying to get back to cooking Sun-Thurs. Tonight, leftovers. Tomorrow OUT!

  3. We are just completing a 9 week kitchen remodel today and I am so, so, so excited to cook again. I make casserole-type dishes all the time. (But I am in the distinct minority in thinking that carbs aren’t so bad. I eat a ton of carbs.) We have a vegetarian, so we make a lot of veggie/cheese/pasta dishes. We also live in WI, so cheese is a main staple of our diet. 🙂

  4. School meetings/open houses all week this week (plus now I teach Wednesday nights–gotta pay for braces/flute/trip to Germany). So it’s been takeout of all sorts.

  5. Those damn boys eat too much food.

    I recommend starting them on coffee and cigarettes. It helps on the appetite and should also stunt their growth. Good all around. (cigarettes are not too cheap these days, though, I guess. Maybe you can make them go out and look for long butts in working-class parts of town.)
